Up until now, there were exactly zero rhubarb recipe gracing the pages of this blog. Zero, in the nearly eight (!!!) years I’ve been chattering on about food and drink. I didn’t grow up eating rhubarb so I was never familiar with it. I had some vague idea that it was sour and is supposed to go well with strawberries but that’s pretty much the extent of my knowledge on the topic. Last week, Andrew and I had a special date night out and we went to a wonderful local restaurant Plow & Anchor. The whole meal was truly superb, but the dessert was especially outstanding. As per my usual M.O., I ordered the most interesting sounding thing, which happened to be sweet pea creme brûlée with rhubarb compote. Every bite of it was phenomenal, including the rhubarb compote. Clearly, it is time to expand my rhubarb horizons.

e traditionnel « sake » que l’on boit souvent à la fin d’un bon repas chinois n’est pas du SAKE ! Le SAKE est un vin de riz japonais. C’est un vin, ce n’est pas un alcool distillé, donc son taux d’alcool maximum est d’environ 18%ABV. Il y a 2 sortes de Sake : karakuchi (sec) et amakuchi (doux). Il peut être bu chaud (Atsukan) ou froid (Reishu). D’autres appellations sont possibles. Au Japon, l’alcool de riz est appelé Nihonshu (et/ou Soshu) ici aussi, d’autres appellations existent. Il est très difficile de trouver des informations à la fois claires, précises et exhaustives sur l’alcool de riz chinois. L’ALCOOL DE RIZ en Chine porte un nom générique : Baijiu. Il en existe de nombreuses sortes, voici quelques unes des plus connues: wu liang ye, maotai, luzhou laogao, zhuye qing, xifeng, jiannan chun, luopai qu, fen… L’alcool chinois le plus populaire dans les restaurants chinois occidentaux (que nous appelons erronément Sake) est le Mei kuei lu chiew, un alcool de riz et/ou de sorgho aromatisé avec des pétales de rose. Donc, ce que le distillateur amateur peut essayer de faire, ce n’est pas du Sake, mais de l’alcool de riz.

Dans ce groupe, il y a des fils de paysans, des ex-citadins, des installés depuis 25 ans et d’autres depuis avant-hier, des vignobles de 3 à 20 hectares. Certains ont la fibre jardiniàre, d’autres sont plus vinificateurs. Mais tous ont conscience que la terre ne nous appartient pas et qu’il faut la respecter pour pérenniser notre métier, tous sont prêts à prendre des risques pour produire de beaux raisins et les accompagner en cave pour qu’ils soient le reflet d’un endroit et d’une année ; de beaux raisins transformés en vins honnêtes et buvables.
