烘焙度较浅的咖啡,酸碱值在4.5~4.7之间,中深焙的Full City酸碱值在5~5.5左右,深度烘焙(Dark Roast)的PH在5.5以上。常人的味蕾而言,饮料的酸碱值超出5.5以上,就很难察觉它的酸味,重深焙豆的酸碱值往往超出5.5,因此不易喝出酸味。人类味蕾对于酸碱值在5以下的饮料,很容易喝出酸味,因此浅焙豆会有酸溜溜的味道。
